Vegan Caesar Salad

A refreshingly healthy take on the classic “Caesar Salad”.

For years, I’ve neglected the Caesar salad after learning about just how unhealthy my ‘old beloved’ really was. The super heavy dressing, flood of parmesan cheese, and not-so-calorie-friendly croutons tally up close to 800 calories! So now, I decided that it was time to bring back the mighty Caesar, but with a healthy twist. 😉

Say HOLA to my Vegan Caesar Salad!

This salad is super simple to make and the avocado dressing delivers a delicious creamy texture while providing you with all of the nutritious benefits of the mighty ‘cado! Say buh-bye to the parm and hello to the “nooch”, a.k.a. nutritional yeast, a wonderfully healthy substitute for cheese. Guilt-free and delicious!

Ingredients:
  • 2 heads romaine lettuce
  • 1 ripe avocado
  • 3 cloves garlic
  • ¼ cup water
  • 2 tbsps nutritional yeast
  • 1 tbsp apple cider vinegar
  • 1 pinch sea salt
  • ½ Lemon
  • freshly ground black pepper to taste
Method:

1. Gather your ingredients. Pit the ripe avocado and add it together with the garlic to the food processor.

2. Juice the lemon into the food processor.

3. Add the apple cider vinegar.

4. Sprinkle in the nutritional yeast, along with the sea salt and freshly ground black pepper (to taste).

5. Pour in the water.

6. Cover and pulse until the dressing is smooth.

7. Wash and drain the romaine lettuce. Chop it into 1-inch pieces and add it to a large salad bowl.

8. Add the dressing to the lettuce and toss to coat.

9. Sprinkle additional nutritional yeast over the salad.

Serve and enjoy!
