Vegan BLT: King Oyster Mushroom For The Win

December 19, 2017

I often find many gems at my local farmers market in Studio City, CA, but this one takes center stage this week!

Say hello to the glorious King Oyster mushroom.

At first glance I thought, hmm, I can’t really sauté this, what on earth would I do with it? Opportunely the lady at the mushroom stand leans in and says.. “make bacon”.

Challenge accepted! I was blown away by the end result.

I hope you enjoy this vegan BLT with an Argentine-Fuddhist twist 😉

  • extra virgin olive oil
  • organic maple syrup
  • pink himalayan/sea salt
  • organic sweet paprika
  • organic pepper
  • 2 large King Oyster mushrooms, sliced into bacon strip-sized slices (about 1/8th inch thick)
  • chimichurri/ blöde kuh cultured cashew spread (or any spread you have handy)
  • sourdough bread
  • a packet of organic romaine lettuce
  • 1 avocado
  • 1 tomato

  1. Preheat the oven to 350 degrees F.
  2. In a small bowl, combine the maple syrup, sea salt, paprika, and black pepper. Stir it up!
  3. Place the sliced mushrooms in a large mixing bowl and drizzle with olive oil.
  4. Add the syrup mixture to the oiled mushrooms. Time to get those hands dirty 😉 make sure the mushroom slices are well coated.
  5. Arrange the mushrooms on the oiled baking sheet with space in between each one.
  6. Bake for 25 minutes, or until the mushrooms turn dark brown. Then flip the mushrooms.
  7. Bake for another 20 minutes, until the slices start to really darken.
  8. Let cool for at least 10 minutes (this will also crisp the mushrooms).
  9. ENJOY!

Hara Hachi Bu

Hara hachi bu

The Okinawa people of Japan are the longest lived, healthiest people on the planet.

In the same way my finance friends take their advice from people that are doing well financially, I take my health advice from those that are LIVING well.

Here is one thing the Okinawans don’t do…they never eat until they’re full, they eat until they’re no longer hungry.

Scale back on the quantity of food on your plate, and add some quality years to your life.

Sprinkle in an antioxidant rich plant diet, daily walks, gardening, and a little Tai Chi, and you have yourself the recipe to a happy, vital, and abundant life.

Together Inspired L.A.

October 12, 2017

Last New Years Eve I received a phone call that left me speechless.

My family and I had lost my Grandfather’s wife to diabetes. Exactly one year after losing my Grandfather, we had now lost his shining star; a warm, caring, compassionate, and selfless woman, who always put everyone else’s needs above her own.

I felt a deep void inside, and knew I had to shed light on this crippling disease.

Diabetes is affecting over 350 million people worldwide, and that number continues to increase. There is no question that we are in the midst of a diabetes epidemic; and in my neighboring community of Boyle Heights, the diabetics are 10x more likely to have a limb amputated than anywhere else in Los Angeles. A truly daunting statistic.

The beacon of hope for this high risk populations lies in the wonderful service of,  The Center for Limb Preservation & Advanced Wound Care at Adventist Health White Memorial.

On October 5th, I visited the Center and had time to tour the facilities, and speak with the leading physicians; who are dedicated and determined to do everything possible to improve the quality of life of the residents that are suffering from diabetes. Unlike most hospitals that simply treat symptoms, I found great comfort in the fact that their focus was on providing the patients with education and treatments that focus on reversing the growing number of diabetic patients facing amputation.

The Center offers the newest, most comprehensive services of its kind in the Western United States. By utilizing advanced treatments and prevention modalities, the Center does an incredible job at preventing future wounds and limb loss. Apart from amputation, diabetes can lead to other serious health conditions such as heart disease, stroke, blindness, and kidney failure; making it imperative that we focus on prevention and timely care.

As leading physician Dr. Stanley Mathis poignantly stated, “time is tissue”.  The rapid response team here is truly life-saving for those at risk for limb loss, where time can make all the difference in saving a limb, or a life. This Center makes it possible to save a person’s limb by bringing all the specialists to the patient without having them travel or wait for the care they need, no matter what the service.

These amputations have a profound effect on people lives, and the lives of their family and friends.

I applaud the entire staff of physicians, nurses, technicians, and educators who work tirelessly to improve the lives of so many. Diabetes is a tremendous public health problem that needs critical attention. Too many people are suffering from a preventable disease. We must continue to spread awareness, and empower patients with the education and tools necessary to help avert this crippling disease.

TOGETHER we can affect real sustainable change.

It has been an honor to collaborate with Adventist Health White Memorial on a cause so near to my heart.

Boost your Health & Save Money: Why Eating Seasonally Rules!

September 12, 2017
seasonal produce guide

Your belly, Buddhists, and your bank account all agree, that eating seasonally is the way to go!

There are so many benefits to consuming food that flow with the cycle of nature and that were grown just around the time you are about to take that delectable bite! Apart from receiving a far greater nutritional boost, it also promotes balance with the earth’s resources as well as its life forms. We must learn to embrace the change in seasons and indulge in all it has to offer. Buddhist’s believe produce grown from the earth during a particular season can benefit your body during seasonal changes.

Buddhists are 100% in flow with nature. Most supermarkets are not.

We have become way too comfortable, technology has helped feed our impatience, and our health and the planet are feeling the repercussions. Thanks to food processing and technology, we can have those strawberries, whenever we damn well please. And that’s the problem. In order to indulge our year round desires, and eat whatever fruit and veggie we want, when we want, that produce is doused in pesticides, preservatives, and wonderful wax. Studies have shown that spinach and green beans lose two-thirds of their vitamin C within a week of harvest. Add to that days upon days of transport, and idle squatting on grocery shelfs.

Adios antioxidants. Arrivederci nutrients. Au revoir minerals.

Check out The Fuddhist’s Seasonal Produce Guide here

We place a lot of emphasis on eating organically; and not enough on the importance of eating seasonally. When you eat something in season, that was produced within a 100 mile radius, you get the most out of that produce nutritionally speaking, while at the same time supporting your local farmers and sustainable agriculture. This is one sure way to lower your carbon footprint.

Several ancient and holistic medical traditions view seasonal eating as an integral part to excellent health and healing. Their beliefs seep in ancient wisdom; for they understood the importance of aligning ourselves with the environment.

Let’s strive to lower our food miles by hopping aboard that locavore train.

Get ready to boost your health, preserve the environment, and save yourself a bundle.

All aboard!

Take a Break From the Buzz With a Digital Detox

April 10, 2017
digital detox

When’s the last time you truly felt calm and centered?

Was it lying in bed on a lazy Sunday morning? Cooking dinner with friends? Yoga class? Reading a book?

All of these situations have one thing in common: they’re unplugged.

When you’re “unplugged,” it means you’ve stepped away from the constant flow of digital information that surrounds us. Sure, you may not feel tugged and strained while you’re fielding emails, checking your phone, and snapping pics and vids left and right. But studies show that this constant connectedness does takes its toll on us both mentally and physically.

Exactly how is constantly being plugged in affecting us? Here are some of the indicators.

#1 Lost Sleep

Stare at your phone before bed? Who doesn’t? Unfortunately, this is exactly what you shouldn’t do if you want a good night’s rest. Studies show that the blue light emitted from phone and tablet screens restricts the release of melatonin, an essential hormone that helps us shut down for the night and get to sleep.

#2 Unproductivity

Yeah, that’s a word; it means we get less done! And it’s exactly what happens when we’re constantly checking social media and being sidetracked by texts, DMs, emails, gifs, and other digital distractions.

#3 Bad Posture

Can it get any worse? From sitting idly in front of a computer all day to that terrible, awkward neck-angle we adopt when scrolling through our phones, it turns out the digital onslaught can even mess up our posture.

What To Do?

We all know that nixing the digital world altogether isn’t an option. Social media is still a great way to stay connected with friends, relatives, and what’s going on in the world.

On a personal level, technology has allowed me to stay connected with my loved ones in Argentina and around the world. Without apps like Whatsapp and Skype, just sending a funny text or having a quick video chat with my family would be impossible, and I would feel so much further away than I actually am.

At the same time, I know that taking the occasional break from technology is healthy. “Checking out” every once in a while with a digital detox is an awesome way to free your mental bandwidth and allow yourself to focus on the things in life that truly matter. Your laptop isn’t the only one in need of a recharge and reboot …

4 Fuddhist Tips for Unplugging

The key to a digital detox is starting slow. Here are some great tips to start you off!

  • Dig out your old kitchen timer and set it for just one or two hours of screen-free relaxation.
  • Choose one specific time each day (or week!) to check social media, and stick to it.
  • Do leave home without it: Your phone, that is. Pop that sucker on the kitchen counter and drive off with friends for a fun adventure sans portable.
  • Make your bedroom an off-limits zone for phones. It will help you get to sleep and make for more relaxing mornings.

So what do you do to unplug? I’d love to hear your ideas – leave them in the comments below!

The Power of Wellness Travel

April 4, 2017
wellness travel

I finally put myself first and the result was life changing.

Our busy lives and hectic routines are anxiously keeping us all on auto-pilot. The overwhelming amount of to-do lists and constant worrying is taking a serious toll on our physical and mental well-being. As a result, being “plugged in” while running on “empty”, leaves us feeling depleted and uninspired. No matter how stressful things get, rarely do we take time to rest and recuperate. We come in dead last on that to-do list, and oftentimes we don’t even make the list.

It’s time to put yourself first.

And that’s exactly what I did when I pulled the trigger on a weekend escape that granted me the luxury of simply forgetting about everything and worrying about nothing. There is no better way to rejuvenate and recharge then to nourish your body and soul with a wellness getaway! Wellness travel doesn’t have to mean a full three days of yoga and meditation. The key is to work on parts of your personal health that you have been neglecting, and focus on the areas that you feel need the most love and attention.

Enter: Le Blanc Spa Resort!

This Five-Diamond gem, is one of the many wonderful Palace Resorts in Cancun, Mexico. Another Le Blanc is set to open in Cabo San Lucas this fall!

I have to admit, I usually don’t do all-inclusive resorts, but Le Blanc is 100% Fuddhist approved! The quality food, outstanding service, and sheer beauty of the surroundings all contribute to the seemingly magical energy of the resort. The moment you check in, the warm staff greet you with a glass of fresh coconut milk and deliciously crisp granny smith apples. You are then introduced to your butler.

Yes, everyone get’s a butler!

I must admit at first I felt a bit uncomfortable asking for things, but Roberto’s welcoming spirit helped me to quickly rid of those silly reservations. He was always cheerful and ready to serve! First of all, did I mention my room was already stocked with champagne, chocolate covered strawberries, and gourmet treats. What more could I ask for?! Well, I do recall having a strong craving for extra dark chocolate one night, and Roberto was more than happy to oblige. 🙂 The impeccable service doesn’t end with a charming butler.

Hold tight, the pampering is about to reach new heights!

Say hello to Le Blanc’s “Comfort Menu.”

Le Blanc offers in room aromatherapy, a variety of bath salts, and even an assortment of pillows to choose from!

Every morning, to help balance my body and mind, my room smelled of pure coconut and verbena oils. And, in the afternoons Roberto would change it to a revitalizing Australian eucalyptus and mint. At night I was gifted with the relaxing aroma of lavender leaves.

In addition to my personalized aromatherapy, every evening my tub was prepared with my preferred bath salt (lavender-vanilla). Next level spoiling. Gracias Roberto! As if I wasn’t relaxed enough, I had many a pillow options to choose from: orthopedic, lavender, chamomile, goose feather, and hypo-allergenic. You can’t really go wrong with any of these choices, but I’m a goose feather kind of girl 😉

Can I stay here forever?

Getaways where you come back with more cargo than you left with, are not for me. I like to keep it moving during my travels! I’ve never been a fan of a solo routine at the gym, because I get bored quite quickly. I believe keeping your body guessing, is the key to staying consistent with your workout. Thankfully, Le Blanc had a variety of fitness classes that kept me mega motivated and in shape during my stay!

That mini flan wasn’t going to burn itself off 😉

I signed up for aquatic spin, TRX, salsa, zumba, pilates, and wound things down with meditation and hatha yoga classes. Then came the post workout treat 😉 After sweating it out, I would lay out oceanside, soaking up the wonderful Mexican sun, at one of Le Blanc’s stunning infinity pools.

Ok ladies, let’s get right to it. The Spa. Wow.

First off, you’re drink of choice. They had everything from skin loving chlorophyll on tap, to my personal favorite, a mint beet infusion drink 😉 Mmmmm. And the beautifully serene relaxation area was always stocked with delectable dates and an assortment of fresh fruit and nuts to snack on.

Furthermore, the spa offers a cold/hot plunge hydrotherapy tub, music therapy sauna, and herbal steam room. There’s even a bucket of freshly cut cucumbers, as well as thermal lavender and eucalyptus water for you to spray on before entering the sauna. Most noteworthy, was the lavender rosemary mud mask and CHI deep conditioning treatment. Let’s just say my face was green, my hair was dripping in conditioner, I was sporting cucumber glasses, and I’ve never been happier.

The cherry on top of the self-care cake. My Kukulcan massage.

The Kukulcan massage is both a physical and spiritual cleansing ritual. This Mayan practice involves two masseuses who use four hands to simulate a choreographed movement of the sacred jaguar, snake, and eagle. The Mayans believed we were all born with an animal spirit, and each animal represents a different life energy. Especially relevant is the snake, who holds a healing power that represents transformational change. Their hands mimicked a snake motion for a portion of the massage, and it was unlike anything else I had ever experienced.

Prior to the massage, the masseuses had me burn a copal, a resin used from pre-Mesoamerica, to help cleanse the body and mind of negative energies and anything that may be holding us back. I then indulged in two blissful hours of complete abandonment.

It was the perfect ending to an unforgettably epic weekend.

The goal of any healthy-minded travel is to return home feeling revitalized, centered, and inspired to continue living a healthy life. These new experiences offer you a newly inspired perspective and allow you to see life with fresh eyes, shedding light on what truly matters. Restoring your mental and physical health is the greatest investment you can make. I grant you permission to pamper yourselves. You’re worth it.

There is no better way to serve others than by serving yourself first.

5 Reasons to Spring Clean with a “Teatox.”

March 21, 2017
Spring Cleaning! Just add hot water 😉

It’s time to rid our lives of the toxic non-essentials that plague it. Before you spend hours tidying up the bathroom vanity, I invite you to look a little closer and clean out the junk that’s weighing you down the most. Give your belly a friendly pat, for that’s where you will find most of your toxicity.

Your gut is the magical “swiffer.”

Your tummy will sweep away all that toxic waste and deep clean you like a champ. All it needs is the right product to help it do it’s job. So put down the mop and shelf organizer, and pick up a bag of loose leaf tea!

When we don’t give our digestive system ample time to rest, we hinder the one defense that can heal us. The word detox can be intimidating to most because it has lost it’s true meaning. The elimination process shouldn’t be the result of you white knuckling through an agonizing 30 day juice cleanse. A simple way to activate our detoxification system is by indulging in a warm cup of delicious tea. Several cups 😉

The reality is that we are constantly detoxing, to some extent.

It’s “teatox” time! Oh, there is so much to look forward to, and so little to do.

Here are five benefits to teatox-ing this Spring:

The truth is, the majority of us are chronically dehydrated. This can lead to a dull complexion, and a plethora of health problems. A teatox has a sneaky way of hydrating you without you noticing, all while boosting your largest organ with antioxidants and polyphenols. Say hello to glowing skin!

When we ignite our body’s detoxification system the restorative effects are heaven sent. Tea helps flush out stubborn toxins and allows our bodies to fully repair and rejuvenate during shut eye, which leads to much brighter days.

The digestion process is our number one energy drainer. Toxins keep us sluggish and slow. When we lessen the digestive load and help aid the elimination process with nutrient filled liquids, aka detox teas, we free up our energy bin and can enjoy the benefits during our waking hours.

Ridding our bodies of toxins helps lift the mental fog many of us carry around. When we start to feel better emotionally we make better decisions, and as a result we begin to focus on what truly makes us happy.

Cleansing your organs gives your metabolism a healthy boost! When you rest your digestive system and fuel your cells with nutrients, your body begins to burn stored fat. Yes, please! Teatox-ing will also help reduce bloating, which is an added bonus 😉

There are hundreds of teatox programs out there, some more intense than others. There’s no need to drink 16 cups of tea a day. I’ve come to realize that what truly matters is not the following of a rigid tea regimen, but simply the drinking of more tea. I incorporate it into my routine by starting and ending my day with a quality cup of loose leaf tea.

Happy Teatox!

A Tiramisu-Coffee Collaboration: The Energy-Boosting Creamy Tiramisu Smoothie

August 21, 2016
PALEO in heels Creamy Tiramisu Smoothie
There’s nothing quite like a foodie/fuddhist/fresh roast collabo.

As a strong supporter of all things organic, fair trade, and delicious, I stumbled across this incredible brand of coffee hailing from the UK called Shooters & Hill. The coffee I devoured comes from Magdalena, in the ‘Sierra Nevada de Santa Marta’ region of Colombia, home to 30,000 indigenous people. This small batch urban roaster delivers organic and fairly traded coffee, from a top of a hill in South East London, and for those lucky enough to live nearby I strongly recommend their full service pour over coffee experience!

As fate would have it, a creamy tiramisu smoothie that I had been drooling over, happened to use none other than Shooters & Hill coffee. The creator of this wonderful recipe is Zoë, aka, Paleo in Heels. I was inspired by her journey from sickness to health, could relate to her battle with chronic pain, and found it synchronistic that we both came from the wonderful world of television. Not to mention, I fell in love with every single recipe on her blog!

Say hello to my very first Fuddhist Collaboration!

A big thank you to Paleo in Heels and Shooters & Hill for delivering such quality, and for being generous enough to allow me to share it with all of you!

Creamy Tiramisu Recipe!
  • Two cups chilled organic strong black coffee*
  • One cup unsweetened almond milk
  • Two small frozen sliced bananas
  • One tbsp cacao powder
  • One scoop vanilla protein powder (I like to use Carnipro Paleo protein)
  • Two scoops Amazing Greens chocolate infusion (Replace with a large handful of spinach & extra cacao powder if you do not have this to hand)
  • One cup of chilled water to make this smoothie go a bit further
  • One tbsp ground flaxseed
  • Tbsp coconut oil
  • One scoop of chia seeds
  • Cacao nibs to sprinkle on top
  • Large handful of strawberries, fresh/frozen to make a Strawberry Tiramisu. Trust me! 🙂

PALEO in heels Creamy Tiramisu Smoothie
How to make chilled coffee…

*I make a big pot of coffee the night before by placing three scoops of ground coffee into a cafetiere, pour over hot water, leave to steep until cool and then plunge. Pour the coffee into a glass bottle and place into the refrigerator overnight for use in smoothies and iced coffee beverages for the next few days.

  1. Make your coffee as per instructions above.
  2. Place all ingredients apart from any ingredients you would like to sprinkle on as toppings into a high powered blender and blend until smooth.
  3. Pour into two glasses and enjoy.

This smoothie keeps well in the refrigerator to drink later on in the day as an afternoon ‘pick me up’ snack.

Guilt-Free Nutella Treat!

guilt-free dessert saves waistline

In the world of health and wellness, sweets and treats are usually frowned upon. Well, what if I told you that this tempting recipe is not only 100% Fuddhist approved, but also courtesy of my beautiful body building sister, Natalia ♥ No one watches what they eat more than those competing on a consistent basis. My sister has always had a knack for all things sweet and that is how Natavisco Kitchen was born. She has worked tirelessly on reshaping and perfecting her trusted dessert recipes so that even those competing wouldn’t feel an ounce of guilt if they indulged every so often. Natalia uses quality ingredients and goes out of her way to create delicious delicacies that leave you feeling satiated and guilt free. There’s no one I’d trust more with my sweet tooth. Go ahead, take a bite and smile; your waistline is still in tact 🙂

A note from Natavisco Kitchen

*People who frequently cook meals at home eat healthier and consume fewer calories than those who cook less. Obesity is an escalating public health problem that contributes to other serious health issues, including diabetes, high blood pressure and heart disease. The evidence shows people who cook at home eat a more healthy diet. Moving forward, it’s important to educate the public about the benefits of cooking at home, identify strategies that encourage and enable more cooking at home, and help everyone, regardless of how much they cook to make healthier choices.
